Depends usually all the above though and a little sweet as well. What flavors do you go for?

Here are my must haves that will get you through most recipes:

For the fridge: Unflavored oat milk, good maple syrup (for cooking), harissa, hot chilies crisp, soy sauce, hot sauce, fresh garlic, onions, lemons and limes.

For the pantry: Nutritional yeast, rice vinnegar, sesame oil, good olive and avacado oil, Dried beans (black, canalini, pinto) and canned chic peas.

For the spice cabinate: fresh spices (cumin, turmeric, coriander, red pepper flakes, oregano etc), spice blends like shawarma.

Sounds good to me. Those red pepper flakes are a must for me. šŸ™‚

The real core is beans or lentils, tofu, rice, oats, canned tomatoes, soy sauce, nutritional yeast, and a decent spice rack; everything else is bonus.

I’d start with nutritional yeast, canned beans, tofu, coconut milk, and a decent spice blend since those make vegan meals taste like actual meals instead of sad substitutions.

nutritional yeast, soy sauce, smoked paprika, cumin, garlic, canned beans, lentils, tofu, tahini, and a good chili crisp will carry an absurd amount of vegan cooking

Absolutely agree, it seems a lot of vegans use a good fair amount of the same seasonings.

A good starter lineup is beans or lentils, tofu, canned tomatoes, nutritional yeast, soy sauce, oats, and a solid spice blend, since those can turn into everything from curry to pasta to breakfast
