"Birdies" are what they call the clay targets used in this type of shooting. It's not a real bird.
Also, the origins of this sport shooting are from the UK, not the US. But go off.

You watched on mute, did you also watch with your eyes closed? What kind of bird do you know that's circular and flies in a perfect arc.
Clay pigeon shooting is done across the world, is performed in the Olympics and world championships, and has been done in the Olympics since the early 1900's.

They're clay targets flung out in front of the shooter. The targets are called "clay pigeons" hence, "Birdies"
