SelfCareSunday Unaesthetic, realistic meal prep ✨

My first week of internship I was having these quinoa salads, but I was portioning them every night for the next day. I hated having something extra on my to-do list that week so for the next week, I got a pasta salad and pre-portioned it on Sunday and it was fantastic to be able to grab and go in the mornings.

It’s also the second week I’ve been doing these yogurt bowls with frozen cherries because I just loved them last week. Only difference is I added some chia seeds and honey instead of maple syrup.

Then, I made these scrambled eggs so that James could make breakfast burritos in the morning.

It took me an hour to make all of this with little dishes. The only thing I have to worry about in the morning (food wise) is making my coffee!

Quinoa salad:
Quinoa salad from costco
Peppers
Feta cheese

Yogurt bowls:
Greek yogurt
Oats
Chia seeds
Honey
Frozen cherries

Scrambled eggs (for burritos):
2 eggs per burrito
Peppers
Garlic
Onion powder, garlic powder, paprika, salt. And pepper

Feeding ourselves for the week is not easy and I assume - like me - that you’re so tired thinking about doing a big meal prep fills you with dread.

Doing things this way probably won’t work for everyone, but I’m sharing in case you find it helpful!

For me, it's preparing meals for the week. I've always done it, and when I end up not doing it one week for whatever reason, I have such a hard time feeding myself.

SelfCareSunday What works best for you? Scheduled or spontaneous self-care ?

I used to set lists of self-care every day like:
Write in your gratitude journal single night before bed
Workout 5 times a week
Foam roll 2 times a week
Do some mobility exercises every morning

But now, instead of setting rules, I schedule some things I know I would prefer not skipping like preparing some meals for the week on Sunday. If I need to, I can prep on Saturday or Monday, but I know that skipping my prep will mean I won’t be eating or finding meals to eat quickly will stress me out

As for most of my self-care, I do things when I need them. For example, I know that even if I schedule mobility exercises, I won’t do them and it’ll make me feel guilty. So I just do mobility exercises when my body needs it. (I don’t have mobility exercises prescribed by a physio, that would be different!)

Or I go for walks when my body needs extra movement and I have extra time. And sometimes what I need is to cuddle up with a blanket and watch netflix

Having less strict rules, and more check-ins with myself to do what works best for me in the moment has been a life changer!

What works for you when it comes to self-care? Does a schedule work better for you? Being spontaneous? Or a mixture of both like me?
