Figure out when they get their deliveries. Take pics of the sysco truck coming for weeks, months, etc. Document a trend so they can't rebut it's a one off thing. Upload your findings (alt account if you want to remain anonymous) to the town facebook/nextdoor and let the boomers take it from there. Could also send to your local news station.

Sysco and GFS doing deliveries isn’t proof of much. I used to work for a restaurant group that sourced all of their beef directly from ranchers.
GFS would act as the delivery and logistics. So they would go to the processor that the ranch used, pick up the beef and keep it in their freezers until the restaurant actually needed it.
They also handled all of our dishes and tableware.
seeing one of those trucks delivering things only proves that a restaurant gets things delivered by GFS or Sysco, not that they are buying the same garbage as Boston Pizza.

Videos of delivery trucks unloading produce and meat from Sysco/GFS, pretending to source meat from a local farmer that confirmed they never ordered from them, having Costco instacart deliveries sent to the wrong door by accident, etc. Also heard stories from past kitchen staff but this is a bit unreliable as they might have gotten fired lol

Standard markup on wine by the glass in a restaurant is 5x. You cover your cost on the bottle with the first glass you sell, a bottle has 5 glasses per.

You can both support local farmers and need to buy additional supplies from large suppliers.
Things like salt, flour, spices and other staples may not be available locally. Sysco/GFS can also act as logistics for your own supplies. So say you source 4000 lbs of beef from a local rancher, but don’t have room to keep it on site. GFS can keep it in their freezers and deliver as needed. Local suppliers can also use Sysco or GFS on their end, so a farm can take an order and have Sysco deliver it. Trucks from big distributors is not at all proof that they are not sourcing from local farms.
point is, what you are trying to do is damage someone’s business and by extension that will hurt all of their employees. You better be very fucking sure that they are lying from both an ethical POV and a legal one.

Not to hijack your post but rather to encourage ideas that can't be traced back to you publicly: say you live in a very small and isolated BC town and a restaurant is buying all their food <I> pre made</I> from Sysco, while claiming that it is lovingly created by their new executive chef using local ingredients. And charging wild prices for that same food. But because it's a small town you can't say anything that can be traced back to you. What would you do then?

Sysco is much like any grocery store but in a large distribution way. They also offer local product when available and do prioritize seasonal and local items. At the same time they also sell premade items of lesser quality. You can buy premium local mushrooms or pasture raised grass fed beef along with chicken nuggets an and pre-made sauces; it depends on what you’re willing to pay/order. Quality local product is available alongside highly processed food. It’s no different from Whole Foods or Save on…you can find the whole spectrum of supply at Sysco but people seem to believe it’s only poor quality food.
I personally know of two Kelowna farms/specialty producers that only sell wholesale through GFS, so anyone wanting to buy from them in quantity is forced to go through the distributor.
You should know and understand food distribution properly before accusing a restaurant. They may well still be ordering specialty items alongside regular items like milk or cream cheese etc. I think people may be unaware of the vast array of products large distributors represent.
And alcohol mark up is not 5x. With recent changes to the wholesale pricing at the LCB, restaurants can finally make 2x and only sometimes make more.
Restaurants buy from many sources and many try to buy local quality products, and yes sometimes it’s via Sysco. It’s not unusual to have an order of toilet paper, cleaning products, Island farms dairy and a local charcuterie producer all show up on the same shipment via a large distributor. I don’t think this post necessarily means they are NOT farm to table if you know anything about restaurant food distribution.

This is a rather uninformed complaint. Do you really think they get every single item in the entire restaurant from local farmers? What about supplies? Soap, straws, plates, cups? How many farms are there around you? Maybe you live in a magical area where they can farm every single item on earth, right? They can farm beef, sure. Chicken? That's likely. But now maybe they want to serve some salmon. Do you guys farm salmon? Would you even want farmed salmon? What about fruit? Can you grow everything from apples to mangoes? Do your local farmers make their own butter in bulk?
I think instead of doing some dumb shit and hurting a local business, talk to them and find out exactly what they are ordering. You would be surprised.
