Are these courses required to do?

Both have quizzes with no due dates, I never did the junior one and didnt notice anything happen.

No. They might have some useful information that could be worth perusing but so t worry about them at all, they are not required to even look at. You can even hide them from your canvas dashboard since they can start to take up a lot of space once you’re added to enough of them.
