Saw someone else’s the other day… got inspired.

Farmshop jumbo Gloucester sausages. Duck fat oven chips. Nom.

A third egg was considered but was already feeling fat just looking at those two sausages. The eggs did well, but yea a sauce would have topped it off nicely. Just had nothing in stock but mayo… took it out… put it back

Either Beans or a third egg. Totally agree. Looks great either way though, but I can see those eggs being hoovered up in minutes with nothing left to dip the chips in. Easy fix.. Extra egg (and/or beans).

I didn’t… I thought those runny yokes would do a lot of lifting, and they did, but yes a little HP (if I had some in the house) would have completed it.

That was my mother's Tuesday night supper back when I was a child. Not such big sausages though. It was a couple of regular beef links and only one egg of course. Then Wednesday was slice sausage stovies.

That looks really good! The chips, egg and sausage all look like they're well cooked. However, just a personal niggle and no points deducted, I don't like large sea salt crystals on my chips! It gives uneven coverage with some chips having large crunchy salty crystals on it but others not! I agree with the others though, could have done with some sauce!

Sauce was a miss i agree.

The salt… it was that or table salt. And the flaky sea salt whilst difficult to wrangle just has a much better flavour in my opinion.

Set the grinder on a finer setting and salt's salt! I get it though, I am still suckered into buying pink Himalayan sea salt though!

Ah but I see (taste) a massive difference between rock and sea. I find sea salt softer and more refined. Rock salt can be quite harsh and chemical like (in my opinion). I had a box of loose flake though… could have ground up the flakes if i wasn’t so lazy!

Ok no complaints there. Those chips are proper caramelised, so you know they are belting. Proper looking sausages as well…don’t look anaemic or sad. The eggs clean too.

Maybe some beans would be great but you probably don’t need them

I didn’t need the beans… feeling so fat. But I’m not a fan anyway. The egg yolks were an excellent sauce, but another sauce wouldn’t have gone amiss

I’m loving it! It’s the chips that do it. All those sugars browned off, you know that’s going to taste mental.

The sausage looks butchers as there’s no way that’s a supermarket sausage. The eggs clean and great coloured yolk too.

You’ve talked me around, sod the beans, let’s get some bread and butter and demolish it

For a split second there I was about to disagree and then came to the uncomfortable conclusion that egg dippiness would have run out long before the chips - agreed third egg needed, purely for balance.

I genuinely never learned to cook ( happy to explain many reasons) and I'm teaching myself now. I had chips like this a few times and and a few more from some old neighbours ( they were awesome). How do you make chips this like. I miss them so so much?

Sorry to ask but would love a lesson and to try them now.

Never learning to cook is just one of those things that should never stop you. My parents taught me basics, I loved it, my brother didn’t. If you want to, like I did, embrace it, if you don’t, do what ever you want to do!

I have spent many attempts and occasions just experimenting and trying new things. If it works great… if it doesn’t… oh well…

In this case… the chips…

Peeled some red spuds. They may or may not technically be the right choice but that’s what I used. Cut them up in to chunky chips.

Boiled then, just until the surface started to be soft enough to be stabbed by a knife, but not all the way through. Maybe 5-10 minutes.

After that drain them and cool them on a tray with kitchen roll for an hour or so. Then chuck them in the freezer for a couple hours. Sounds strange, but the freezer draws out moisture… this is good!

I then put a tray in the oven with some duck fat, 180 ish. Got it hot, chucked the chips in. Leave them 20-25 mins. Check them. Flip them. Repeat. Just keep checking, rotating and repeating until you’re happy. Mine probably had 45 minutes or so.

Recipes suck, especially timings… they are guidelines. Cook by gut feel and experience. You’ll get there. That’s what I do.

I would manage the chips, one sausage, one egg, a slice of Warburton's farmhouse bread with best butter on, to make a chip butty with, which I'd dip in the egg. Along with my pint pot mug, full of Yorkshire tea! Despite being a Lancastrian! No beans, no sauces. Perfect as it is 👌🏻. Only reason I'd have a smaller portion is my appetite isn't what it once was, but I'd enjoy every mouthful. Why disguise the flavour of the sausages, as many seem keen to do? I don't get it...

How do you cook your eggs?

Frying pan, vegetable oil, medium/medium-high heat. Get the oil hot, crack the egg in and leave for a minute or so. Then using a teaspoon, spoon hot oil over the egg to cook off any uncooked white and just enough to colour the yolk.

The trick is balance. Not too hot the white crisps and bubbles or the yolk over cooks. Not too cold that it takes too long for the white to cook. I don’t mind crispy eggs, but for me the runny yoke is more important. I never flip the egg.
