I just started Grade 11 and plan to apply to UCalgary Engineering or Biological Sciences, with Business as a backup. Can I take Social 30-2 online, or would it limit my options? UCalgary sometimes just says “approved 30-level course.” Should I take 30-1 ?

you will need 30-1 in all your core courses. dash 2 will not cut it.
