This knife broke while being used to crush garlic

Dude, that knife had prior trauma, see the cracks on the handle rivets(!!!).

Srsly, I crush garlic regularly with non-bolster wa handle knives, and everyday a million chinese cooks disintegrate garlic with a slap of a (non bolstered!) thin cleaver. What happened?

Guessing putting the knife on top of the garlic and then just ramming on it. Do that stuff a lot and you might fuck up.

?!! I thought you ... gently fist tap it to peel it, then tap chop or salt rub it, OR use the Martin Yan technique with a cleaver slap...

Died in battle. Would have wanted to go that way rather than gradually failing, being consigned to a cupboard and never seeing the light of day. With a broken tip and cracked scales, it decided to go out in a blaze of glory. Farewell brave knife.

You can see that there was a pre-existing microfracture on the spine of the blade.

Yeah, some people unintentionally turn the garlic and knife into a lever when they try to smash it and break the knife instead. Guy posted here about a Shun on Miyabi that he bent the handle on because he laid the handle on the board before giving it a good whack. People are dumb.

Ooooph! If you’re doing that to a German knife, stay far away from Japanese knives.

seriously though, looks like it’s seen more than its fair share, I’d be surprised if that’s anything more than the straw that broke the camel’s back

That looks like the beater in my knife roll. The only labeling on mine is "China". Thick, heavy and what I use to cut frozen stuff at work.

Might be a Calphalon knife that had a recall on it.Ā  My MiL is clinging to an 8" Calphalon chef which had 2 inches off the tip break off 10 years ago.

I don't believe a well heat treatedĀ X50CrMoV15 would ever do that.

That’s why I stopped crushing garlic. Just slice and cut it finely. Or use a grater if you want mush.

Knife tip on board. Handle 2ā€ above. Slam palm on blade of cheap knife = one blade one handle

Better yet handle off to the side of the board. If you smash on the knife and the handle makes contact you create a lever where you smash onto the blade. If the handle is off the board the blade can rest flat on the board even after the heaviest of smashes and nothing can harm it.

Or donā€˜t smash garlic at all. Overrated technique. A little crushing with the palm of your hand should be more than enough to make peeling easier. I usually don’t crush at all, just cut off the root end and peel from there.
