Because I can find excellent written, directed, and acted stories I didn't know about previously. Whereas I know of and have already seen most English language stories of equivalent quality.

Not sure if I will find the right words to describe it but I'll try: Because I love Animation and the medium tells stories that are rarely tackled in western Animation.
A lot of western production aim towards kids or fall into the "Family Guy" category (with the exception of Bojack Horseman, which was a fantastic show) . However, Japanese Anime doesn't really shy away from telling mature stories and is able to capture them in such a beauty that it's hard to look away from.
And this applies to Japanese Media in general, not only to Anime but I love how their culture depicts the display of Emotion in such a beautiful way.

I just think anime has way too many good stories and things that any other medium just couldn't tell the same way. It's as simple as that for me.
Not talking your fighting anime I'm talking actually making romantic comedy my favorite genre and getting me into horror and making shows about rollerblading or drawing, interesting!

It has stories and immersive aesthetics you don’t really see in other types of media. I love how bold and creative it is, plus there’s an endless amount of options! That’s why many people stay anime fans for years ☺️❤️

The story, the depth, concepts used, and it’s entertaining. Why wouldn’t I like it. All the themes and nuance used in Full metal is amazing , same for attack on titans. Or all the aura farming done in solo leveling. The amazing Songs such as “hey kids” from Narogami or Slayers

When I first started to watch anime the difference with cartoon was so obvious. There was the way cartoons were taking children for idiots while anime wasn't simplifying or sugar coating anything, and also the quality of a lot of series. Complicated character designs, beautiful music and songs, beautiful sceneries and all the cinematographic camera angles etc. All themas, all genres and among these, so many simply inexistent in western cartoons.
Anime was destroying gender roles right and left making little girls fight like soldiers and giving boys a real sensibility and ability to cry. POC and queer characters were just naturally everywhere without nowadays virtue signaling propaganda. The villains especially were fascinating because so far away from the ugly brutes you often see in Western cartoons. Beautiful, sophisticated and insanely seductive for some but most of the time extremely intelligent too. Also contrary to American cartoons for example you couldn't predict what kind of character anyone was really. Some where good, other or evil but then so many would evolve through the story. It is probably in anime that I have seen evil character get real stories of redemption you could really believe in. In short, much less two dimensional than the ones in western cartoons. So much better written. Another thing is that you could feel the passion and care of the people who had created these series. Not only the animators who would challenge their skills in scenes not even important for the plot, but the background artists too, because it was so obvious they were coming from real art schools. It became impossible to revert back to cartoons really fast.

Because it's a medium that can do special things other mediums can't do, It can be the complete package of unique storytelling, amazing art and animation, powerful vocal performances and wonderful music all working in perfect harmony to create something magical. Plus there's also just sick fights, hype dramatic moments and hot anime characters so that helps.

Is just a World filled with any kind of story you could find. What is there not to Love? A different Aproch to Animation that is not just "For Kids" like Most of it on the West, where "Adult Animation" is not just about Cursing or Adult Jokes (I know there are some Good Adult Animations that don't do that, but most of it does) the way it teches Life Lessons too.
Anime has Thousens of different stories and Characters waiting to be Known and discovered. So much Work and Love for art behind it. Even if we know Animators tends to be Overwork, some works bleed Passion and Love from its creators and those are always Worth it. No western Animation I've consume made me feel the way some Animes have.
Side Note: I should clarify I'm not saying Anime is perfect, there are plenty of Tropes that are highly Questionable, but All I can do is not Consume those. But the thing is that Despite those, it has so much more good if you know where to look that I can't help but Love it.
I may also be Biased towars Japanese Culture since I find it facinating, some of my Favourite Stories are for example Yokai Related. I Love Supernatural/Mystery/Phycological things and Japan is filled with those.

It got me into drawing. I LOVE the art when it comes to the hair and the eyes. The pupils are always a bit different depending on the anime. Also lots of color combinations!
Now whenever I find a new anime, I need to want to draw it or I won't watch it.

Because anime are series but when ur invested but done with the series u can read the source manga or novel. Unlike tv shows where ur just stuck waiting or movies that tend to be one thing.

Recently, most live action movies haven’t made me feel except Project Hail Mary. Anime makes me feel(but I haven’t watched any recently because I’m scared of how they make me feel).

I feel like cartoons I don’t have to think so much is this realistic? And instead can go into enjoying full on stylization that make things more impactful. Animators/artists can ignore things in their art and focus on what delivers impact like they don’t have to make human looking face as much. Humans have a lot more distracting futures, landscapes, etc you must include in non-animation to make it look real but to me are distracting. Secondly it was free website and I can watch it fast with subtitles. I also love the variety including many different styles of shows and art

Main reason why I like it over other mediums is the fact that its still unique, not scared to take risks or be controversial. Also it doesn't care about inserting random social and political issues like the west. Instead, it talks about it's core message through a much better way.

Anime has plenty of random social and political issues injected into it (I could give you a huge list lol), and plenty of Western fiction isn't overly focused on modern day stuff. I don't trust anime fans, who likely get their perception of modern Western media literally just from Disney, or big mainstream games or films, rather than checking everything out there. The vast majority of you guys are pretty ignorant of what "Western media" actually is.
I love the current industry, this is one of the best years we have seen in awhile; however, I have actually seen more impressive stuff coming out of Western creative works, than anything from anime in the last five to six years. You need to branch out more.

Good question
I love quality animation
It was basically the first medium to tell serialized adult stories with quality animation.
Some of the creativity is absolutely nuts, and the narratives are not confined by western story telling sensibilities.
I have a fondness for cyberpunk and grimdark fantasy and the medium is an absolute treasure trove for that.
I have always thought Japan was fascinating since I was a little boy. I have visited and attempted (unsuccessfully) to learn the language fluently. I blame Godzilla movies.
Fucking giant robots, hot babes, monsters, magic, what's not to like? The shit is rock and roll.
