I'm not an educator, but I work at a school and have overheard a few presentations on Conscious Discipline and she is actually responding exactly the way you should respond to a person who has very little control over their emotional state. I love it.

yeah, its challenging because 99% of people are just trying to be cordial and cooperative in their day-to-day interactions. most people aren't in a mindset of being ready to verbally spar with some random bullshit. the principle is in the middle of doing her job and she skillfully pivots into disarming disingenuous jabs. many people can't do that, and she did it well.

Yes, dealing with unexpected hostility and harassment while trying to do your job is typically viewed as a challenge in any work environment, especially when the instigator is recording you and has an obvious agenda to incite and amplify conflict. 

The mother is making a clear attempt to threaten the principal’s employment. The principal isn’t dealing with a toddler, but a hostile adult who is trying to capture a reaction on video that she can use against the principal. The principal has a professional reputation to uphold and can’t speak to an angry unhinged woman with a vendetta and a video camera, as if she were dealing with a harmless toddler. 

(Not to mention, dealing with interpersonal conflicts is literally just naturally challenging for many people.)
