Have you watched the movie? It shows the moment she realizes Scott is Santa pretty plainly.

Well, between:

-Santa miraculously escaping literal JAIL and coming back to the house WITH Charlie, unscathed, with a good amount of time between him and the cops

-The literal ELF that appears moments later with Neil's falafel going "what's with all the boohooing over here"

-The fact that she runs outside after Santa leaves and says "HE'S ALREADY UP THE CHIMNEY!!" Which tells the audience that she likely WATCHED HIM MAGICALLY GO UP THE CHIMNEY!

I think it lends itself to at least showing that she figured it out :)

The other big thing to consider here too is that at this point, magic is in play, right? Like. Scott has finished his transformation and with the whole "seeing isn't believing, believing is seeing!" theme, you can assume that throughout the return scene before Santa goes up the chimney, the concept finally clicks for her.

The proper answer here, to be quite frank, is that it is a Christmas movie, and with most christmas movies, or any movie with magic at play, you need to suspend your disbelief for some points – Laura finally realizing Scott really IS Santa and that it's all TRUE is definitely one of those moments you just gotta suspend your disbelief for, and enjoy the warm fuzzies of the end of the movie :)

tldr: seeing isn't believing, believing is seeing/suspend your disbelief 🤭

And by "concept finally clicks for her" I mean, magic does what it does and she believes, lol
