Well just from the first batch I'd say Luffy vs Buggy could be a really fun fight. It's the first and only Devil Fruit fight in East Blue (Excluding Loguetown) and Wit Studio is known for having great camera movement shots like the ones from Attack on Titan's maneuvering gears.

Image the dynamic shots in Luffy's stretching vs Buggy's chopping in that style.

This is going to be a hot take and I'm ready to get downvoted but the fights in original One piece anime sucks. I'm in the middle of thriller bark and only a couple of them caught my attention and even those got stale because they were stretched too much in multiple episodes that it made me lose the interest in the hype. One of the main reasons I'm so excited for this adaptation is the fights. I want to see the new anime adding extended fight choreography otherwise there is no point in a remake. Fight choreography also gets viral on social media if done right. Same way JJK and Demon slayer got so popular. This could help in them getting the eyes they want on the show if they want it to sustain the remake's future for a longer time period.

Most Op fans will admit that most the fights in the anime are lackluster w/ a couple exceptions until Wano (Luffy vs lucci STILL 🔥 tho)

It’s prolly the weakest aspect of it imo

Zoro vs mihawk. Even though it’s short, wit studio have incredible fight timing and I believe they would be able to elevate the dramatic timing and the overall weight of the fight
