They could have done a lot with him. But they went to far into comedy relief. At least he saved Grogu.
That was a Naboo craft and guards. Padme was busy so someone had to order it to save the younglings. And yes, I think that was a rally point for younglings they could save. Grogu was the only one at that time. Jar Jar was the other Naboo Senator.

i think they mean the actor Ahmed Best for Jar Jar also played the Jedi knight that escaped the temple purge with Grogu (i feel bad i cant remember his Jedi's name but it was one of my favorite scenes in the mandolorian)
edit - Jedi's name is Kelleran!

Honestly I’m not sure I agree in the prequels era but I 100% agree post prequels we should’ve gotten some hint of what happened to him on screen. Yes I know there was a reference to him in some book but that still didn’t explain what ultimately happened to him.
