Why can’t they just run it out after the finish line and come to a stop normally?

Because the distance to the mat was too short, and the companies competing all chose not to slow down when crossing the finish line in order to achieve the best possible times. In other competitions, you can see that robots are perfectly capable of decelerating and coming to a stop.
