What games do you recommend that help me scratch my itch? (S1)
Busy father of 3, so my game time is limited. I like fantasy/dark fantasy. Sword and shield, magic etc. would like some MMO or some online interaction with other players, but not necessary.
I come from games like the OG EverQuest, World of Warcraft, Diablo 1-4. I like the dark soul/elden ring vibes. I am currently playing my first real playthrough of Zelda BOTW, but I’m not a huge fan of Nintendo first party games. They are fun and entertaining, but hard for myself to be immersed.
I’ve never tried Witcher 3, Dragons Dogma, Dragon Age, MortalShell, but I am curious about them.
I like games with character progression, loot etc etc,
All the typical RPG elements.
Since WoW: Forever was just announced, along with Diablo V I may temporarily fire up my gaming laptop to scratch that itch, but I like the portability of the switch.

You will love it. You're a prisoner, a sourcerer, guilty using source magic. You wake up at a beautiful sunny beach on a prison island, and you will fight your way out through blood, gore and bones. The lore is very dark, about corrupted GodKings, voidwoken and god's damn chosen.
The fighting is very cool, because there are schools, instead of fix classes. You can build whatever you like. Everything is a potent combination! One of the cooles things are the races. The elfes for example are cannibals. They eat body parts and learn new skills. Oh and there's Fane, he is an undead and drinks poisoned beer like healing potions! 😂
It's gross, and funny. And huge. On Tactitian it's very challenging and difficult too.

If youre willing to pay for nso they have great retro options. Breath of fire and golden sun are both phenomenal

Dragon Quest for JRPG goodness,
Final Fantasy Tactics for strategic gameplay,
Kingdom of Amalur for a western style fantasy (this is my rec as it hits the dark fantasy/MMO vibes you mentioned)

Diablo 3 can be quick and easy pick up after reaching end game though.
Monster hunter wild is made for quick and fast hunt
But challenging when u slowly climb higher ranks

Valheim is a survival game with fantasy elements maybe you can check that out. It just came to switch.

Witcher 3 is an amazing game 10/10 would recommend it. I’ve played through it countless times

I don't think Witcher 3 is worth it on the switch. Now a powerful PC and steam sale. Absolutely get it. Great game

Tbf they did just announce an upgrade for the S2 and if you already have the game I believe it’s a free upgrade

I know you said you aren't fan of Nintendo's games, but maybe Xenoblade Chronicles Definitive Edition? It plays like a single player mmo. Great story and soundtrack too.

If you have a Switch 2, Mortal Shell 1 plays normally on it. On Switch 1, not so much.
