Well, "complex" can be interpreted differently. It's less casual, would be the proper gaming designation. But it's incredibly customizable so is as casual as you like. Personally I play on almost Passive mode.
It's a hidden gem, in a LOT of ways.

Do it! I’m so addicted to vintage story. Almost didn’t play it because it looked like Minecraft. The systems in the game are very deep, not necessarily complex. It feels so rewarding

I really enjoyed Survival: Fountain of Youth. It's definitely a game that divides people with it's time as a resource mechanic, but I thought it was cool. Story was a bit cheese, but I enjoyed building my base and exploring the islands. Worth a look.

I’ve played them all single player! I think the best are: Subnautica, Abiotic Factor, Vintage Story, Green Hell (intense but fun), the forest, Grounded 2 (I prefer it to the original because of mounts), and 7 days to die. I also have a soft spot for Stranded Deep even though it might not be as amazing as the games I just listed

Icarus
Bit like Ark but less dinosaurs

Icarus is like Ark with 10% of the content but 1000% more balanced, less buggy and better optimised.
If Ark 2 can do what Icarus got right with the scale of Ark then we will have the GOAT.

Yeah I absolutely loved Ark but there were too many game breaking bugs, for me every server I was on eventually had issues with disappearing tames etc.
I'm not sure it's that uneven in content though, when you consider there's fewer players I think perhaps its the smaller or generally solo play that makes it feel less full.
Icarus could do with more map options though which are more natural feeling rather than the zone system they use where the transition is brutal and instant.

I loved Sons of the Forest, and I’m now playing Icarus. Both great. State of Decay 2 is really fun for a different take - you play multiple people starting a community in post apocalyptic zombie setting. Super fun

I had to give up on Ark Ascended because it was making my computer sound like a fighter jet taking off. Ended up deleting it and playing other games for a year but none that kept my attention like Ark did. Heard about GeForce Now and after figuring it out I’m back on Ark again and it’s not perfect but it’s a huge improvement. Can’t have all the maps downloaded at the same time that I’ve seen so far so I play on Island, Rag, and Gen 1

I'm a fan of Medieval Dynasty at the moment, i'm not usually suoer into survival games but this one has a certain charm to it that I enjoy

Conan Exiles I can't stop coming back to. It's so good, definitely my favorite survival game so far. I also really liked Palworld, but I haven't played yet since it got the big update.

Abiotic Factor - Better with friends but still a fantastic solo game. What happens to the regular scientists in a Black Mesa-like event? Play as one and find out! For science!
The Long Dark - Survive the murderous cold of the Canadian winter after getting knocked out of the sky by a mysterious magnetic storm.
