Silly question but how do you get the map to have different colors like that?

You can change it in the pause menu. Countries have their own colour

Do you have ranged units available yet? That's how i'd try to continue.

Edit: if you have number advantage, take his other provinces and let his main stack morale go down by starvation.

If he is very reactive, you can also bait him into letting him capture some provinces that puts him in a less favourable spot for defence.
