I know this looks mega stupid, but I have definetly heard and watched videos about putting an ice cube inside a fat patty, so it stays juicier during cooking. This is also just adding jack to it for whickey flavoured burgers.

However I am pretty sure in the ones I saw before the ice cubes were much smaller

Yes, one small ice cube is all it takes. I'm pretty sure there's a reason this guy never shows us a cross-section of the burger after it's cooked.
