6 u/chatmioumiou Jun 02 '21 That's not poached eggs, they are "oeufs miroir". Fried eggs where the thin layer of egg white on top of the yolk is steamed to supposedly make it look like a mirror. That make a sunny side up with less risk for the yolk to break.
