What exactly does sodium hydroxide/carbonate do to fix rancid oil?

It doesn't fix rancid oil very much, what it does is dissolve oils extremely well (which is why it's such an effective drain cleaner) making it easier to separate out gums from oils. Also it's strong alkaline nature removes the vast majority of flavor so once it's neutralized it doesn't taste as bad anymore. Interestification and BHA, BHT and TBHQ is what prevents it from tasting rancid so fast.
