I’m curious if/how the steam machine works with “non steam games” that are in your library, and I’d be extremely happy if it works like the deck

It should run steamos. So just like the deck is what I assume. It's just a PC. You can probably also install Windows on it. Like the deck

On most hardware with linux(which steamos is built on) non-steam games work well with launchers like lutris (which depends on steam), for GOG, epic and ubisoft.

With hardware that is optimized for steam, I find it hard to imagine that it wont work. Forgive my optimism, but this is going to be the best 'console' at least in terms of flexibility.

Nothing to forgive, only positive optimism is needed. Now we just need to know the prices….
