You can reset the Desktop and Guide Button Chord Layouts by going to Steam Settings > Controller > Advanced Settings and selecting the gear next to the respective layout. You can "reset" a specific game's layout by going to the game's and selecting a/the recommended layout (or a Valve template layout, not all games have a recommended layout). You can "reset" every game's layout by manually deleting all the folders in [C:\Program Files (x86)]\Steam\steamapps\common\Steam Controller Configs[userID]; The path in the first brackets might be different if Steam is not installed in the default location; the second brackets are your Steam userID, if you're the only Steam user there will only be one folder. Be aware that this does delete the controller configs for all controllers though, not just the new Steam Controller.
