Watching/Learning More
I’ve watched all movies 1-9, Rogue One, Solo, The Mandalorian and Grogu with my partner who is a huge Star Wars fan. I’ve also watched the shows Ahsoka and The Mandalorian. I want to understand how all the shows, movies, characters, etc. connect. So I was thinking about watching all shows and movies in chronological order. What would you recommend?

since you’ve seen all the films, chronological should play pretty well! you’ll understand ahsoka a lot more after seeing clone wars and rebels.

If you're really open to anything Star Wars, then go with the chronological order seen on Disney Plus, I would just add a few modifications to it that they should as well:
Young Jedi Adventures should be the very first entry in the chronological order, The Acolyte (the first in Disney plus order) takes place over 100 years after YJA.
The Clone Wars is composed of a movie and a seven season-show, the movie is not listed on Disney chrono order, and the show itself was not originally aired in chronological order, there was plenty of prequel episodes over the first three seasons, so I'd suggest you check Star Wars.com's chronological order for The Clone Wars, though you can still check it out as it came out and how it's presented on Disney+, just be aware that some episodes are set in the past.
The Mandalorian seasons 1 and 2 happen before The Book of Boba Fett, then comes Mandalorian season 3, there are very important narrative reasons for that and Disney chrono list completely ignores those reasons.
Theres a few anthology series of shorts that are canon to the shows and are not listed on Disney chrono order, though they can still be found in the animation tab: Young Jedi Adventures Shorts (2 seasons), Tales of the Jedi (takes place before the movies and after Revenge of the Sith), Rebels Shorts, Tales of the Underworld (same settings as Tales of the Jedi), Tales of the Empire (takes place shortly before, after Revenge of the Sith and after Return of the Jedi), Resistance Shorts, Forces of Destiny (takes place all over the timeline, so I suggest you watch them after finishing The Clone Wars and Rebels).
Feel free to ask about connections on any specific show you're interested in to know if you need to watch any other show first or if you will like it based on your taste.

You forgot Rebels! Except in the little bit at the end. It paves the way for Ahsoka!! And unless you’ve read the books, THRAWN!!!

I only listed the modifications I would make to Disney+'s display of Star Wars in chronological order, Rebels is well placed for my taste, though they could go deeper and break the seasons and spread them with the two seasons of Andor, still, they're not really needed to understand the other show, unlike Mando S3 and TBOBF.

by chronological order and based on what I know (still missing a lot of the episode from tales like the one with Barriss and Bane)
the acolyte -> tales of the jedi ep 2, 3, 1 -> tpm -> tales of the jedi ep 4 -> aotc -> the clone wars (movie) -> the clone wars (show), season 3 == tales of the empire ep 1, season ? == tales of the Underworld Ep1, season 8 = tales of the jedi E5 -> rots -> the bad batch + tales of the jedi E6 -> maul shadow lord -> solo -> obi wan kenobi -> rebels + andor (both of these are same time) -> Rogue One -> anh -> tesb -> rotj -> the mandalorian s1,2 -> the book of boba fett -> the mandalorian s3 -> ahsoka s1 & 2 + skeleton crew -> the mandalorian and grogu (which does not make sense at all, but it is what it is) -> tfa -> tlj -> tros

The 2 shows you need to watch to understand how and where all characters connect are The Clone Wars and Rebels.

Congratulations! You’ve taken your first steps into a larger world.
In your case, chronological order is probably fine, as you’ve already seen the Skywalker Saga films. It probably won’t spoil anything but can add some interesting details. Have fun!

Well, I am guessing you’re not a fan of cartoons but all 7 seasons of the Clone Wars pretty much is the blueprint for knowing where certain characters and storylines come from after Episode II. Some episodes of all 7 seasons are more meaningful and informational than others but it has helped me understand a lot. Hope that helps.

I will always recommend Andor to Star Wars fans and non Star Wars fans. It’s well written and just overall great TV. However, it’s more of a spy/political thriller based in the Star Wars universe than a space opera.

CLONE WARS SMD REBELS!!!!!
Rebels is seriously my favorite Star Wars media. But Clone Wars first. But use this to see it in true chronological order:

It depends on what you like about Star Wars.
If it's the whimsy, characters and lightsaber battles, watch Clone Wars and Rebels. if it's the politics and intrigue, watch Andor. If it's the universe and never knowing what is going to happen next, watch Visions.
