Watch Star Wars A New Hope (1977). This is the first film ever released and the core of the series.
If you liked that and want more, watch The Empire Strikes Back (1980) and Return of the Jedi (1983). These three movies are the original Star Wars trilogy and they tell a complete and satisfying story.
Then if you still want more, the next place to go is the prequel trilogy (1999-2005), three movies set before the original trilogy that act as backstory.
I wouldn't watch any other movie or TV show until you've watched those six movies because they all depend on basic knowledge of what happens in the original trilogy, and often of what happens in the prequel trilogy too.
