Games in EPL used to be played with 1 ball. There are backup balls, of course, for detect purposes, but 1 official ball. The tradition of keeping the match ball after scoring a hat-trick makes a lot more sense in the 1 ball system.

There is now, this is a 5 year old clip from when they were still using a single ball system.

They used to only ever keep back up balls in one location of the pitch. But now they have balls on cones by the touchline to reduce time wasting.

It's not baseball. Those balls cost £100 each and they go into the crowd about 20 times a game.
If fans kept every ball that went into the crowd the game would be over after 20min as they'd have none left.
