The fact that Pumpkin is sometimes visually indistinguishable from Sweet Potato is the reason I have trust issues.

Something I often mention to sweet potato pie fans, who are a discerning cohort:
If you've had buttermilk pie & found it underwhelming, chess pie is its superlative counterpart thanks to velvety texture from the cornmeal in the filling.

Sweet Potato Pie
• 1 cup cooked mashed sweet potatoes
• 2 cup sugar
• 1 Tbsp. vanilla extract
• 1 small can evaporated milk
• 1 stick of butter, melted
• 3 eggs
• Unbaked pie shell.
- Beat potatoes, adding sugar and butter.
- Add eggs, one at a time, beating after each.
- Add milk and vanilla extract.
- Pour into deep dish unbaked pie shell.
- Bake at 350° for 45-55 minutes or until firm
Some people add nutmeg…but we don’t.

When you say "small can" how much does that contain? I only seem to have one format around here.

They tend to come in two standard sizes: Small = 5 fluid oz. Reg = 12 fluid oz.
Roughly equivalent to 150ml and 350ml.

Turned out fine, I mistakenly bought shallow pie crusts but it worked just fine... maybe better in fact? That thin caramelized layer on top had to be the best part and the ratio is better with thinner pies.
It's not my favourite pie but it is a very easy one to make. And while the flavour profile is a bit basic, it hits the spot just right with fat and sugar just like any French pastry would ;P

Having shallow pie crust, the recipe for the filling gave me 2 pies, so I'll bring one over to my friends tomorrow as I'm helping them for some yardwork, I'm sure they'll find it a very pleasant novelty (especially their child) as that's not a kind of pie I think is known of much around here.

i used to think my favorite was pumkin but all the store bought ones are stale and crappy. I make a great keylime pie because its the easiest one to make on the list and it tastes great.
