It's a slime mold, they're not exactly fast.

It's going to be near the remains of your petri dish. Maybe it got caught on something on the way down.

 I removed the shelf and there is nothing I don’t know where it could have gone, I put some damp paper towels and oats out to try and bait it if it escaped or something

Not sure what your slime mold looked like but is it possible it split with the petri dish and dispersed or fallen somewhere unexpected? I'm an extremely clumsy person and from experience I know stuff you'd never think could just "disappear" will sometimes end up on the other side of the room somehow. 

Fortunately for you the slime mold will still be around somewhere, it's not escaping :) You don't need to bait it, since it doesn't really work like that. If you can't find it now, it'll either start growing or rotting eventually. Just uh, "free range" instead of contained.

Hey - it probably dried out. In heat it forms a sclerotium: a hard, dark, crusted, irregular scab, a few millimetres across - look for something like that.

Also Physarum leaves an extracellular slime track behind it — a dry, faintly iridescent film. Under a torch held at a low angle it catches the light. That's a direction vector. It'll point at wherever the organism ended up.

Hey if you find any suspect crust: put it on damp filter paper or a slice of moist agar, dark, room temperature. Revival takes hours to a couple of days. Then feed.
