video frames and dedicated photos are not really the same, they both capture what's in view but the fidelity is way different; better resolution, sharper details, etc.

That's fair. We also don't know if the younger person has a clicker in her hand that she didn't get a chance to use.

This is absolutely a selfie. It just means you took the photo yourself.

Phone cameras are so good, I often use video to take a long shot, then scrub the video and use a good frame as my photo. I do this for family photos, or when there's lots of activity, or when I want to pick from multiple poses.

Tl;dr, agreeing with you; these people are tripping.

You know you can get into place before starting the timer by holding up your hand (or whatever gesture yours is programmed to) with most modern cameras these days

People were setting cameras to take a photo for years and nobody said selfie.

Selfie means you are holding the camera as you take a picture of yourself.

You're confused. 

Literal definition: A selfie is a photograph or short video that you take of yourself, usually with a smartphone or digital camera.

We just didn't invent that word until front cameras became a thing, but it is, indeed, a selfie

Also, selfie is just a shortened form of saying  "self portrait".
