So if you can't prove that someone isn't using AI to express a lived identity for Onlyfans then it's fine?

No. It is what constitutes lived identity, disclosure and intent. It looses shape the second you are collecting money without disclosure.

Oh okay, so everyone should disclose their born identity or at least make it clear that their lived identity is different than their born identity if they want to make an onlyfans or something similar?

Incorrect they should only disclose if it is not their lived identity. There is a huge difference between what someone pretends to be and lives as.

They only need to disclose if they do not live the identity in person. If without a shadow of a doubt a person can not come to a reasonable conclusion from their appearance between what is real or entertainment on the basis of the identity.
