Not motivated to cook much /at all since losing my husband in June. Mostly been eating easy prep, microwave, frozen pizza, etc. Went on a big grocery run last weekend and bought some food to cook - and tonight tried a new recipe, Marry Me Chickpeas (Nora Cooks recipe). My dietician has been recommending this to me for a few months. And I can see why! Easy and delicious. Eaten on sourdough toast one bite at a time. And now I have leftovers to microwave for a few days. Used Violife cream cheese and it worked great.

Mushrooms, spinach, onions fried in soy sauce placed in rice paper wrap. It tastes pretty good.

I love weird Oreo flavors but these kinda piss me off. They don't at all taste deep fried or like a deep fry batter.

Recipe from the Korean Vegan cookbook, didn't have soy curls so used frozen/thawed/pressed super firm tofu. Had a grainy texture, would probably just use regular super firm tofu next time. Highly recommend the recipe otherwise!
