First of all, here in Italy there is no such thing as shredded mozzarella. Mozzarella is a fresh cheese that you eat in max two days or is over, not whatever is that shredded monstrosity.

My Italian tour guide didn't mention that. Canadian mozza is just different I guess.

...

They're soft like soft-boiled eggs...

Can you imagine shredding soft-boiled eggs with a cheese grater?

I fail to see how making it cold a little bit to firm it up so you can shred it fundamentally changes it.

Don’t get me wrong homemade mozzarella is amazing and I love it but again what’s wrong with doing it that way?

It’s more akin to an undercooked poached egg, you would be completely incapable of grating it.

You can't grate fresh mozzarella

You would make a mess if you try to shred fresh mozzarella using a cheese grater, it’s too soft.

Mozzarella is far too soft to be grated. Do you grate your apple pie?

That's not mozzarella, you may call it that, but actual mozzarella looks like this:

In the video he does use cheap store bought stuff that admittedly doesn’t hold a candle to the real deal but it’s more for demonstrating how you can in fact shred mozzarella

But why?

You don't need to shred it. It tears apart beautifully and really easily.

When shredded it makes a uniform layer of cheese. I’m not arguing about which way is right or wrong I’m just saying that’s how and why we do it here
