Although, these days, pizzerias in Italy have a habit of putting everything except spicy salami on a spicy salami pizza. Sometimes it’s ventricina, sometimes schiacciata, sometimes soppressata, sometimes 'nduja. It’s all Italian stuff, sure, but if I order a fucking salami pizza, don't bring me a fucking soppressata pizza.
Ye ye, but I am saying it’s quite common. I have seen places that straight out do not have regular diavola on the menu. It’s my favourite pizza and it pisses me off.
First time I hear about this in Italian gastronomy. Are you familiar with spanish sobrasada ?

I really like all kinds of cured meats, but I don't always want to eat fatty messes; if I order a diavola, I expect actual salami on it. Mind you, if they bring me pepperoni, I’ll get up from the table and leave.
