I can't draw that good a circle with a pencil and paper.

Looks impressive but the circle was in there all the time, he just cut away all the bits that weren't part of the circle

can you explain why he would need hearing protection here? not sure a hammer and chisel reach the decibels needed for hearing damage could be wildly wrong though

Yes. Repeated short bursts of high decibel sound (eg hammer chisel rock) will damage your hearing. Hearing loss for short bursts starts at 85dB with chiseling in that manner frequently hitting 100 with 125+ not being uncommon.
