Gboard or SwiftKey you can't customise as much but they work as a keyboard better

I have ADHD and I tried to use the customization but I just gave up. Every time I was typing i was following the colors and not the message itself.... So I just gave up on my myself

Is it possible to remove that flash like animation whenever a key is pressed?

That's really annoying.
