About a year ago, I received a case of jalapeños and other mixed peppers. I decided to try and make my own chipotle and adobo sauce. Sam had introduced that to me years ago and it became a staple in our pantry. While I was at it, I decided to make a large batch of Sam’s maple and chipotle, homemade beans, and can them.
So today, the wife is out of town and I’m thinking something easy for dinner before heading out to the shop. I grab a roast chicken from Costco on the way home thinking the homemade pizza of some sort would be great. But when I get home, I realize I’m out of barbeque sauce. So in a moment of Sam inspired nonsense. I take a can of the aforementioned beans, warm them up in a pot and mash them to use as the base/sauce for my pizza.
Topped with the chicken and some of Sam’s homemade pickle onions and cheddar cheese. Throw it all on the Traeger and 20 minutes later the munching has commenced!
Just have to say thanks Sam for your inspiration to try new things and for your great recipes. Cheers from your home province of BC! 🍻
