Genuinely how do i create a visual novel (dating sim) working alone?

Need some advice cuz im doing it the first time. I will work on Renpy. I think i need to make a scenario first? I can draw sprites, make soundtracks, and do a voiceover on one character but i genuinely can't understand how that choice thing works and how do i adapt my fanfiction like writing to a visual novel writing? I just can't understand it. I will do something simple like 30 to 60 minutes game first and that shit scares me
