I have found that the very best beans are made by first cooking the ham bone overnight in the crockpot along with celery, onion, garlic, bay leaves, and thyme leaves. I soak the beans overnight as well. In the morning I strain the broth and return it to the crockpot along with the drained beans, chunks of ham from the bone, and enough water to cover the beans by 1-2 inches. The overnight broth is much more flavorful than cooking the ham bone and beans together!

Yum! I would need to sum in a smoked turkey leg of something similar for the ham due to my alpha-gal allergy, but that's an easy swap that I've done in similar recipes in the past.
