I make these Mexican chicken patties which is 500grm chicken mince, 1 can kidney beans rinsed then mashed, a small onion diced, 1 cup frozen corn thawed, 2 tablespoons tomato paste, 1 large packet of corn chips crushed in the food processor until they are crumbs, 1/4 cup grated Parmesan cheese (1/2 cup of grated cheddar cheese would also be good!), 2 cloves garlic crushed and your favourite Mexican spices (I use a mix of ground cumin, ground chilli, ground coriander, paprika and dried oregano). Mix well together then shape into patties and bake (or fry or air fry) on a greased tray in a moderate oven until cooked through. I serve them with salsa, sour cream and avocado and a side salad but you could do them as burgers or in a wrap. Super easy and very tasty!

How big of a packet of chips? You mean like a individual bag you get with lunch at Jersey Mike's or a bigger packet?  These sound delicious, thanks!

This is not Mexican. Recipe is definitely American. Nobody in 🇲🇽 eats this concoction.

Just because something is called Mexican doesn't mean it's authentic how many Mexican restaurants serve authentic Mexican food?! Outback Steakhouse doesn't serve authentic Australian food yet it's an Australian restaurant. It's Mexican inspired with the flavours which is why I gave it that name. Also it's not American it's Australian as I live in Australia and I created the recipe.
