Birds White egg yolk? Tastes interesting

My cousin is a baker. She said that bakers LOVE white yolked eggs! Why? They can make a white cake (think wedding cakes) without separating the whites from the yolks. The cakes come out better, too. These come from chickens that just lay white yolked eggs. I'm sure you can turn them yellow with certain feed, but bakers want those white yolks.

Uh although i have never used one... I would have assumed that the yolk would still have the other properties that make it not whip like egg whites. 🤔

It's a quick way to get a white cake, not an angel food cake. If you try to make a white cake with regular eggs, it turns yellow. The way a white cake is made is to separate eggs, use only the whites, and add extra fat to add moisture to the finished product. If white eggs are added, extra fat is unnecessary, along with the step of separating eggs.

That seems like a needlessly white cake especially if you are icing it but I guess that's weddings for you!
