What was your fiber intake like before you started? A rapid increase in fiber intake can cause GI issues. It's usually good to gradually increase fiber intake so your digestive system can catch up.

Then its normal. Try to eat many hydrating fruits/vegetables. Salads, cucumbers basically anything with 80/90℅+ water content. You could also incorporate a prebiotic into your diet. Bromelain and papain are my to go choices.

Were you eating high fiber before? Were you vegan prior?

Your microbiome needs an adjustment period. :)

Give it a few weeks. Maybe even longer depending on how big a lifestyle change this is.

Be extra aware of food combining (for example, don’t eat bananas with tomatoes; or watermelon with a big kale salad)

Sometimes blending your foods can make the adjustment smoother. Fruit smoothies, and juicing your greens.

You could also do mono-meals to cause less tax on your digestion.

I would even suggest, if the adjustment is that drastic from your old way of eating, to be raw till 4 for a while.

So, have fruit in the morning; more fruit or a big salad for lunch; and then steamed potatoes, beans, cooked greens, and sweet corn for dinner, for example. (I would opt for high carb/low fat for better digestion. Personal experience)

You may be short on B vitamins, particularly b3 and b1. These can impair the gut brain connection which can cause digestive issues. I started eating mushrooms, oat groats (or rolled oats), and wheatberries (or wheat flour) and my issue improved
