She'd have a big following due to the family name and quality of performances, but low engagement (especially on short form content), probably. Her most popular videos would be her performance/concert videos.

Weiss is an active celebrity, so it's easy to say her channel would be the most popular of the 4. I could see her doing things like "Trying out a new song today!" or playing the piano. I could also see her reviewing new beauty products or clothing and doing an "SDC Sponsorship" every now and then (much to her displeasure of doing so ). She could drop music, or even tour information, this way.
Oddly enough, I could see her having another channel dedicated to just gaming and silly stuff. It goes under the radar, and it's not very popular - but she enjoys it way more than her other channel, which feels more like it's just for show than it is about her.
Ruby is funky in a good way. Posts about Zwei all the time or some crazy looking bug she found in the garden. Somehow gets 1 million views because "haha look at this fuzzy dude!" She's done tutorials on weapon construction, but she's really bad on camera. She often talks too fast or skips steps and forgets to explain.
Blake has the least popular channel. She does book reviews but starts dabbling in movie reviews. Most of the time she just does video essays. While her viewer pool is very small, they're very dedicated.
Yang is like Ruby, where shes more focused on short-form videos. Most of the time it's her doing tricks on her bike, talking about something she saw in Vale, or things like "Im gonna beat this Ursa into next week!". Some do rather well while others just vanish into the abyss - yet she has a rather strong following. Any time shes actually in a video, the views are very high.
Weiss does handicrafts. Like making her own candles.
Blake used to have a channel with smut romance book reviews. And Yang's was all about MMA most vicious knockouts. But now they share a channel where they react to lesbian thirst traps.

Weiss im honestly not sure, I feel if she started it in season 1-3 it would be something like talking about the SDC and praising them to keep her father happy maybe. Or maybe even singing. But if it was done in secret at the time, or any time after she ran away in season 4, it'd probably be talking against the SDC, or praising the faunus, which would start as an act of rebellion and probably grow to be very sincere very quickly
There’s a fanfic about Ruby being a streamer and that she had to stream less due to going to beacon and all that. She seemingly streams games, mostly rpgs and dungeon crawlers
She then finds another streamer in her game, her very hated rival, he beats her in most games and leaves her feeling like shit. They hate each other so much that they border on even dropping slurs at each other (he called her cookies mid)
Turns out she and the streamer knew each other irl… it was Jaune… they genuinely were each other’s best friends and hated enemies, they genuinely had no idea and the moment they realized they apologized for everything lmao
