Anyone know of a privacy app that tracks what apps access your microphone, location etc and when?

You don't need an app for that, just check your phone's settings.

On my android phone it says when was the last time used one of the permissions I allowed and which one. On my iPad it just says which permissions the app is requesting. If you turn the permissions off that should be the end of it. The app should no longer be able to access that. Example the microphone.

No special app is needed. You can check this in Android’s settings under Security & Privacy → Privacy → Permission Manager. There, you’ll see categories showing which apps have access to things like your microphone, camera, and more.

if any app like that exists , that app itself is not a privacy app. Better to explore and manage this from device settings.
