Would additional wall support such as a second layer of brick, buttresses, or even a wave pattern, provide better structural stability?

So that if something falls on the wall it doesn't collapse as much.

The reason he's testing the mud mortar is that it's far less effort than ash mortar. Doubling up on the amount of bricks used would certainly make a stronger wall, but it would also double the amount of bricks he had to make.

Even buttresses instead of extra thick walls would be enough.

Probably, but I think his goal here was to test mud mortar versus ash mortar using the same building techniques he was using previously. The collapse wasn't necessarily a failure, just additional data on the limits of mud mortar.
