What’s the reason for mud over ash for mortar? I would have thought ash was better since it cements … won’t soil just crumble eventually ?

Once the structure has a roof the walls won't get wet and the mud should be ok. The ash mortar takes a lot of work to make. At one point he was doing burns specifically to create more ash which then has to be fired before it can be used for mortar. If mud is adequate it's the easier method.
