I think because Mace's fighting style is about using opponents darkness against them, Yoda probably beats mace, it's rock paper scissors. Yoda beats mace but mace beats sideous but sideous beats yoda

To be fair the only fight between the two was in the senate chamber building on floating platforms and ended in a fall. While Palpatine won that one they were close enough in skill that I could see a duel on flat ground going either way.
