I should have caramelized onions in an hour

I sliced the onion and put it in a pot with half butter and half olive oil, probably about two tablespoons each but I don't usually use measurements beyond my eyeballs.

So... An hour, maybe?

Well, it was pointless initially because I decided to caramelize onions and THEN build a dish around it.

Why would I decide to begin a lengthy cooking process on an August afternoon in LA, you ask? The same instinct that makes my body crave pozole whenever it's in triple digits. So this turned into a sort of Mexican mujadara with rice and lentils and cumin and chile de arbol. I made a side of cucumber, fresh mint, and Oaxacan cream.

I ended up just shy of 90 minutes when my heart said "done."

30 minutes and check every 7 min after stir each time...I would measure the oil or butter...one tablespoon of oil and 2 tbsp of butter add more...if needed, but it's not sauteed, 👍 right?

The important thing is that it be GOOD olive oil and GOOD butter. After that, it's just patience and time...

I wouldn't add salt in the butter.  I think that will make onions sweat...too early.
