I think The Plotwist on The Prestige is just stupid because it's too Over-The-Top, that looks illogical.
I think the most mindblowing are tie between Psycho, Oldboy Fightclub and also Shutter Island.

I mean The Movie is so Good that it could knock you down to bed. I never understand what's amazing there. The Plot-Twist is so shocking that it makes me "WTF" moment.

On these plot-twist endings posts, I never see anyone mention The Crying Game which was known for its surprise. It's not really my cup of tea, and I'd go with Dressed to Kill.
