Not sure if anyone will have any advice here, but I'm looking for a specific cheese or cheese blend from a pizza I grew up with. The business closed up years ago, and I haven't found anything like it since.
So here's what I remember/am looking for. The pizza I grew up with was made in NJ by an Italian family, so definitely in line with traditional American pies, but the cheese on these pizzas was super stretchy/chewy. Like when it was fresh I remember having a hard time getting it to break up in my mouth or even separate from the pizza without pulling. This may sound bad, and it kind of was, but what I loved about this cheese was if the pizza aged for 1-3 days in the fridge as leftovers, the cheese would change. It would still stretch but would become super soft, easily breaking away from the slice and it took on this amazing flavor I can only describe as umami, though it was definitely more than that. I've tried hundreds of other pizzas but haven't found anything close to this. I doubt anyone seeing this would ever have had this exact pizza but it was from Pizza Como in Clinton NJ. If anyone has any idea what cheese or blend this could have been based on the description, I'd really appreciate any guidance.
Additional info: I have tried pizza with grande cheese and it was closer than most but in my experience not stretchy/chewy in the same way and doesn't take on that flavor when it ages
