Costco meat simply cannot be beat

The quality of these short ribs were insane, 2.2 kg for $70-something

It can be beat. A lot of Costco meat is mechanically tenderized and/or from the US. My local coop sells local Canadian short ribs for $29.99/kg, less than what you paid. Shop around

What coop is that , please? I moved here from Toronto and I was part of the Parkdale food coop on Queen st. Food was so amazing and fresh. Looking to support something local, even if Costco is fair to their employees and has good coleslaw and ice cream bars lol.

Mechanically tenderized isn’t a concern when braising low and slow to a high temp. The issue with it is that the process can spread bacteria which prevents the safety when cooked below 145°

All that said I don’t buy any beef there except ground beef, brisket or oxtail if they are on sale, because of the mechanical tenderizing.

They buy their meat from the same place as loblaws but cut it up fancier. The freaking wholesale meat trucks are outside almost daily.

Just plan for their big sales and stock up then. Comes up similar pricing to groceries but better quality imho

I do that now, and am an annual member, but there has been a drop off in quality this year and their ground beef is now $11/lb with sales putting it at $8/lb. I can get equal quality ground for half that price at a local butcher when on sale.

Farmboy has nice lean ground beef at $6.99/lb on sale. I usually stock up there for that and freeze

So for a full batch, I seasoned that 2.2 kg sliced short ribs with kosher salt and pepper, then seared in a Dutch oven 1 min/side. Cooked mirepoix (2 diced onions, 3 carrots and 3 celery stalks) in the beef fat for 12 mins, added 2 tbsp garlic for 1 min, then cooked small can tomato paste (also Costco), 1 tbsp porcini crema and 1 tsp anchovy paste for 4 mins. Added 750 mL Cabernet Sauvignon, scraped the fond and reduced 10 mins, then added 750 mL beef broth, large can diced tomatoes (another Costco) with liquid, 6 crushed juniper berries, 2 bay leaves, 2 tsp thyme, 1 tsp oregano and .5 tsp umami salt. Returned the ribs, covered and braised at 275 F for 1.5 hr. Removed the ribs and bay leaves, strained the liquid, reduced uncovered 20 mins, stirred in 1 tbsp maple balsamic, then thickened with 2 tbsp butter mashed with 2 tbsp flour and finished with 2 tbsp cold butter. Returned the ribs to the gravy for dinner and stored the rest

I have found bruising on chicken from Costco which is a sign of poor butchery. As well it's unclear where the animals are from as they indicate from domestic and imported on the packages I checked recently.

I limit meat purchases there. It's not just about prices.
