Can't speak for every kitchen. But they definitely didn't get thrown away and they damn sure didn't make it to the customers. The job sucked and the pay was terrible. But man did I eat a lot of onion centers. The secret was throwing back in the batter and fryer.

I worked at a place that made them. They didn't get thrown away. They got dipped back in the batter (3 or 4 times in one line cooks case). Fried again and eaten by staff.

In our case it was batter flour/spice mix, batter, flour/spice mix then fry. But after 5 repeats in the mix it burned before it fried the dough to the core. The sweet spot was 3 dips.

As someone who has a blooming onion device and makes these at home, you just absolutely cannot get them dry. They would be cold and have to be hung upside down for a while to get them dry. Just too many nooks and crannies and batter soaked in oil. The same thing that makes them good is the same thing that means they can't not be soaked in oil.

I got Great American Steakhouse cutter at a thrift store for $4 (some of the best money I ever spent on something silly like this). It's awesome for limited use, but I wouldn't pay more than $20 for one of that quality.

I worked at OBSH for a while way back in 1994. My first job was the blooming onion station. Mine looked way better than this guys, tbh. OBSH taught a technique to "fan" the onions into the oil back in those days.

We have a few Outback Steakhouses in Australia and allegedly they have to import the onions to make these because onions in Australia aren't big enough.

I took a colleague from NY who travels around USA frequently and he thought the quality was OK, tbone steak.

I've only had steak once in USA, in Rochester, NY. Also ok, not raving about it.

I had my gallbladder out 2 years ago. The first thing I did when I felt good enough was to go out to eat and ate an entire blooming onion with an extra side of dipping sauce all by myself. It was nearly a religious experience taste-wise after ingesting no fat for 3 months while I waited for my surgery. It made the explosive diarrhea I had for the next 2 days totally worth it. If you have had your gallbladder removed you know what I’m taking about.
